Today is a big day for us!

We are celebrating the new year by giving away 2 free meals per week.

I will post more details on how to do this later, but in this post, I am sharing a meal that I ate today.

As per the menu posted at the restaurant, it is served in the style of the traditional Indian meal.

The rice is boiled in water, followed by two types of vegetables.

One of the vegetables is lentil and the other is lentils.

Here are the ingredients for this meal: Lentils: 2 onions, 3 cloves of garlic, 1 cup water (or a good vegetable stock), 2-3 tbsp oil, 1 tbsp salt, 3 cups vegetable stock, 1 tsp coriander powder (or 3 tbsp finely chopped coriichon) (1 tbsp for each cup of water) and 1 tsp cumin powder.

(You can use 1/2 tsp corona in place of the cumin).

I like to add some chopped corinne to the oil. 

The rest of the ingredients are the same as the Indian meal: 1/3 cup finely chopped cilantro leaves, 1/4 cup finely grated ginger, 1-2 green chilies, 2-4 green onions, 1 tablespoon fresh coriachon, 1 teaspoon cumin seeds, 1 inch ginger, some fresh mint leaves, some mint leaves (optional), salt and pepper to taste. 

If you don’t have cilantro, you can also use a chana masala sauce, but I prefer the green chiles because they are slightly spicy.

The ingredients are very simple and the rice is quite tender.

The lentils are quite soft and the lentils give a nice crunch.

The sauce is spicy and not too spicy, but not so much that it is hard to eat.

You can choose to add a little bit of lemon juice or a bit of lime juice to the sauce, or you can omit the lemon juice and use plain water. 

I like to make a lot of the sauce in advance and then reheat it in the morning and enjoy it with a cup of cold milk. 

It is served with a choice of fried rice or a vegetable dish (I like spinach with corioca, green peas and potato with corinna), or with a bowl of vegetables like cauliflower or green beans. 

This meal is great for children as it is quite easy to prepare and serves children at a very small dinner table.

The only drawback is that you need to prepare the lentil rice at home, and you need a lot more ingredients than you usually need for a typical Indian meal!
